The Original Mojito (Mojito with Sugar Cane Juice)
The Original Mojito has a natural, organic style. Guarapo (sugar cane juice) adds a smooth, more substantial taste to the drink, giving it a fresh finish. While not nearly as sweet as sugar or simple syrup, guarapo is more potent, so adding too much can overwhelm the other flavors of the mojito. If the drink is too bitter, squeeze in an additional lime wedge to balance the flavor.
This is what you need…
Fresh mint leaves
Bitters
Limes, quartered
Ice
White/light rum
Guarapo (sugar cane juice)
Club Soda
Use a muddler to crush 3 drops bitters, 3 lime quarters, and the mint leaves in the bottom of a tall glass. This image shows a Mojito Muddler, but any muddler will do. Bitters are drink flavorings that are either bitter or bittersweet. They are generally strong, and intended to be used a few drops at a time. You can find a muddler and bitters at any liquor store.
After you’ve muddled the mint leaves, bitters, and lime quarters thoroughly, fill the glass with ice. Now add the 2 oz. of light Rum. I recommend 10 Cane Rum, but you can choose which one to buy. When buying rum at the liquor store, make sure to ask the cashier whether or not it will be good for making a Mojito.
Fill the glass with Sugar Cane Juice or Guarapo, leaving one inch of the glass to pour in the club soda. Cover with another glass, making sure it is on tight, and shake it for about 10 seconds
Your Original Mojito is ready! Serve with a straw. Add lemon or lime wedges and mint leaves for garnish and serve immediately.
